Our Story

Two Cultures, One Flavor, One Love!

Xaymaca Fusion Kitchen is a Peruvian–Jamaican fusion restaurant in Ashburn, Virginia, bringing together two extraordinary culinary cultures in one unique dining experience.

From the vibrant flavors of Peru to the bold traditions of Jamaica, our kitchen celebrates the ingredients, techniques and stories that make both cuisines unforgettable.

Peru brings a world-renowned culinary heritage shaped by Indigenous, Spanish, African, Asian and European influences — from ají amarillo, ceviche and lomo saltado to anticuchos, causa and pisco.

Jamaica brings the unmistakable flavors of the Caribbean — jerk spices, Scotch bonnet peppers, rum, slow-cooked meats and generations of island tradition

At Xaymaca, these two worlds meet.

Our chefs combine Peruvian techniques and ingredients with Jamaican flavors to create dishes that are familiar yet completely original. Ají amarillo meets Scotch bonnet. Pisco meets Jamaican rum. Peruvian anticuchera meets Caribbean jerk.

The result is not simply Peruvian food and Jamaican food served under one roof. It is a true culinary fusion where Peru and Jamaica share the same table, the same importance and the same story.

The name Xaymaca comes from the Taíno name associated with Jamaica, often translated as “land of wood and water.” Today, we carry that heritage forward while joining it with the rich culinary identity of Peru.

We welcome everyone - our neighbors in Ashburn, families, food lovers, the Peruvian and Jamaican communities, and guests from every culture - to discover something different.
